Three Masters, Three Distinct Culinary Voices

Theodor Falser | October 19–24

Michelin-starred Chef, Johannesstube, South Tyrol

The series opens with Theodor Falser, the creative force behind the Michelin-starred Johannesstube in South Tyrol. Falser took over the restaurant in 2014 and earned its Michelin star within his very first year. His culinary philosophy, rooted in nature and seasonal ingredients, is defined by his “Taste Nature” concept—a celebration of South Tyrolean produce and the wild landscapes of the Dolomites. Falser describes himself as a purist when it comes to regional ingredients, though he embraces cooking and fermentation techniques from further afield.

Simon Hulstone | November 16–21

Chef-Proprietor, The Elephant, Torquay

Simon Hulstone brings more than three decades of culinary mastery to the Maldives. As chef-proprietor of The Elephant in Torquay—a restaurant that has held a Michelin star for more than 20 consecutive years—Hulstone is one of the UK’s most respected chefs. He is a Roux Scholar, former UK National Chef of the Year, and a two-time representative of Great Britain at the prestigious Bocuse d’Or. His commitment to sustainability runs deep: much of the produce for The Elephant comes from his own 90-acre farm and regional producers.

Gabriela Filca | December 1–7

Chef de Cuisine, Nebo Restaurant & Lounge, Hilton Rijeka Costabella

The series concludes with Gabriela Filca, one of the most exciting rising stars in the culinary world. At just 23 years old, Filca became one of the youngest women ever to lead a Michelin-starred kitchen. Under her leadership, Nebo retained its Michelin star, and she has been recognised with Croatia’s Michelin Young Chef Award and named Gault&Millau’s Great Chef of Tomorrow. Her cuisine offers a contemporary interpretation of Croatia’s culinary heritage, drawing equally from coastal and inland traditions.

Each chef will present a curated residency featuring four distinct culinary experiences:

Ithaa Undersea Restaurant

The centrepiece of the series, Ithaa is the world’s first undersea restaurant. Located five metres beneath the Indian Ocean, it seats just 14 guests per service, offering an intimate dining experience surrounded by vibrant coral gardens and marine life. Guests will enjoy seven-course tasting menus crafted by each Michelin-starred chef in this breathtaking setting.

The Wine Cellar

Descend two metres underground to the Maldives’ first underground wine cellar. Home to an extraordinary collection of 18,000 bottles across up to 800 labels, it is the largest wine cellar in the Indian Ocean. Simon Hulstone will host a five-course wine-paired dinner here, with each course carefully matched to wines from this unparalleled collection.

Beachfront Dining with Maldivian Lobster

Each chef will present a beachfront dinner featuring locally sourced Maldivian lobster. These alfresco experiences combine the freshest local ingredients with the chefs’ signature techniques, all set against the backdrop of the Indian Ocean at sunset.

Sunset Champagne Cruise

Aboard the Majesty Yacht, guests can enjoy a sunset Champagne cruise—a floating celebration of fine wine, exquisite canapés, and the Maldives’ legendary golden hour.

Interactive Culinary Masterclass
