From June 2026, Patina Maldives will introduce travellers to KANDU, an experiential dining venue devoted to a modern expression of Maldivian gastronomy. Named after the Dhivehi word for the ocean channels that link the Maldives’ atolls, KANDU is conceived as “a fluid passage between sea and table, where natural currents, cultural memory, and culinary craft converge”.
The restaurant is the only venue within the Fari Islands dedicated solely to contemporary Maldivian cuisine, marking a significant milestone for destination dining in the region. For travellers who seek authentic, story‑driven food experiences, KANDU offers a rare opportunity to explore the archipelago’s heritage through a refined, innovative lens.
“Dhivehi Modern Ocean‑to‑Table” – A Menu That Tells a Story
KANDU’s culinary philosophy bridges generations of island cooking with modern techniques. The centrepiece is a multicourse tasting menu designed as a narrative map of the Maldives, with each course reflecting the character and ingredients of a specific atoll. Traditional staples such as coconut, tuna, breadfruit and native herbs are reimagined with precision and creativity, offering a refined expression of Maldivian flavour shaped by regional memory and contemporary technique.
Chef Abdulla Rifzan (known as Rippe) leads the kitchen. “Maldivian cuisine has always been deeply personal to me,” he says. “With KANDU, we wanted to honour the flavours many of us grew up with and reframe them through a more contemporary lens. This is a menu shaped by memory, by the ocean, and by the incredible produce of our islands”.
The beverage programme highlights fresh, tropical, largely non‑alcoholic creations, including modern interpretations of traditional drinks such as Raa, Sai, and Kashikeyo‑inspired cocktails, alongside inventive serves like a Bilimagu Whisky Sour. A curated selection of wines further enhances the dining experience.
Sustainability at the Core – From Ethical Sourcing to Zero Waste
Patina Maldives has built a strong reputation for eco‑conscious luxury, and KANDU continues that legacy. The restaurant partners directly with local fishermen for daily catches, supporting local communities while minimising environmental impact. This aligns with the resort’s wider sustainability initiatives, which include renewable energy, zero‑waste kitchens, and circular economy practices.
The Fari Islands were designed from inception with sustainability principles, utilising mass engineered timber construction that reduced carbon emissions by over 6,000 tonnes during production and transport. The destination also uses floating solar panels to meet 50% of its total energy requirements from renewable sources. Guests can experience these values first‑hand through Net Zero Dinners at Roots, the resort’s plant‑based restaurant, where seven‑course fine‑dining menus are crafted from locally harvested ingredients.
